Recipe 01: Basic Japanese White Rice

Start with the basics: fluffy, freshly cooked Japanese rice.

You’ll need:

  • For 150 g of rice
    • 150 g Japanese short-grain rice
    • 250ml water
  • For 300 g of rice
    • 300g Japanese short-grain rice
    • 450ml water

Method:

  1. Rinse the rice well and add it to the rice cooker with the water.
  2. Soak for 30 minutes - 1 hour.
    *If the soaking time is too short, the rice may remain hard in the centre.
  3. Cover and microwave at 600W for 10 minutes for 150 g of rice. For 300 g, microwave for approximately 12 minutes.
  4. Leave covered inside the microwave to steam for 10-15 minutes before serving.

Tip: For colder weather, soaking the rice in warm water at around 50°C for approximately 15 minutes can help shorten the soaking time.


Recipe 02: Salmon & Mushroom Rice

A simple Japanese-style mixed rice with salmon and mushrooms, all cooked together in the microwave.

You’ll need (Serves 2):

  • 150 g Japanese short-grain rice
  • 200 ml water
  • 1 salmon fillet
  • 50 g shimeji or button mushrooms
  • 30 g maitake or oyster mushrooms
  • Shiso or spring onion, to serve

*For the seasoning:

  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp cooking sake
  • ½ tsp salt

Method:

  1. Rinse the rice, add 200 ml water and soak for 30 minutes – 1 hour.
  2. Remove any skin and bones from the salmon and cut into bite-sized pieces. Separate or slice the mushrooms.
  3. Add the salmon, mushrooms and seasoning to the rice cooker.
  4. Cover and microwave at 600W for 10 minutes.
  5. Stir the rice gently, then microwave for another 5 minutes.
  6. Leave covered to steam for 10 – 15 minutes.
  7. Finish with sliced shiso or spring onion if desired.

Tip: Button, oyster or other fresh mushrooms can be used depending on what you have available.


Recipe 03: Mushroom Cheese Risotto

Creamy, cheesy and ready in minutes — an easy way to turn leftover rice into a quick meal.

You’ll need (Serves 2):

  • 150 g cooked rice
  • 30 g brown onion, finely chopped
  • 30 g mushrooms
  • ½ tbsp butter (approx. 6 g)
  • 1 tbsp olive oil
  • 50 g grated mozzarella or pizza cheese
  • ½ chicken or vegetable stock cube
  • 100 ml milk
  • Salt and pepper, to taste
  • Grated parmesan, optional

Method:

  1. Finely chop the onion and slice or separate the mushrooms.
  2. Add the cooked rice, onion, mushrooms, butter, olive oil, stock and milk to the rice cooker and mix well.
  3. Cover and microwave at 600W for 3 minutes.
  4. Season with salt and pepper, then add the grated cheese and mix until creamy.
  5. Finish with parmesan if desired.

Tip: This is a great way to use leftover cooked rice and any mushrooms you already have in the fridge.


Recipe 04: Chicken Rice

A quick tomato chicken rice that's perfect for an easy lunch or weeknight meal.

You’ll need (Serves 2):

  • 150 g cooked rice
  • 50 g brown onion, finely chopped
  • 50 g chicken thigh, cut into small pieces
  • 2 tbsp tomato ketchup
  • ½ tsp soy sauce
  • ½ tbsp butter
  • Salt and pepper, to taste

Method:

  1. Finely chop the onion and cut the chicken into approximately 1cm pieces.
  2. Add the cooked rice, onion, chicken, ketchup, soy sauce, butter, salt and pepper to the rice cooker and mix well.
  3. Cover and microwave at 600W for 5 minutes, or until the chicken is fully cooked.
  4. Mix well before serving.

Tip: Add frozen peas or corn for extra colour and vegetables.
